Commercial flour is milled months — sometimes years — before it reaches your kitchen. In that time, the germ and bran are stripped away to extend shelf life, taking most of the nutrients with them. Fresh milled flour is different. Stone-ground whole grain flour retains the bran, germ, and endosperm — the complete kernel — meaning every bag is packed with natural oils, vitamins, minerals, and fibre that simply aren't present in supermarket flour.
Why Organic Matters
Not all fresh milled flour is equal. Organic wheat is grown without synthetic pesticides or fertilisers, which means what ends up in your flour is pure grain — nothing else. At Kalleske Farm, our wheat is certified organic and grown in the Barossa Valley, one of Australia's most storied agricultural regions. Stone-ground fresh means you're getting the best of what the land produces, without compromise.
Flavour You Can Taste
The natural oils in the wheat germ give fresh milled flour a depth of flavour that refined flour simply can't replicate — nutty, warm, and complex. Once you bake with it, it's hard to go back.
Baking with Fresh Milled Flour
Fresh milled flour behaves a little differently to commercial flour, and that's part of the joy of working with it. Higher hydration — whole grain flour absorbs more water than refined flour, so start by adding 10–15% more liquid than your recipe calls for and adjust from there. More rest — give your dough time to hydrate and relax. A longer autolyse or overnight rest in the fridge will reward you with better texture and flavour. The learning curve is small. The results are exceptional.
